Riz Graz

Popular in Burkina Faso, this tomato and fried rice dish is often served at parties. The name actually means “fat rice,” and it’s often made with beef or chicken, eggplant and other veggies. Many Burkinabe add chiles and other spicy ingredients, but this version is mild. So you can decide whether to spice it up or not!

Super sleuth tip: Sneak in extra nutrition by hiding some veggies in this dish! Try adding finely chopped carrots, grated zucchini or spinach for bonus goodness. Test if your family can detect those healthy, hidden veggies!

Adult help needed.

 2 tbsp cooking oil
 34 tomatoes, diced
 3 tbsp tomato paste
 1 yellow onion, diced
 2 cloves garlic, minced
 2 bay leaves
 1 chicken bouillon cube
 4 cups water
 2 cups white rice
 salt to taste

Heat oil in a large saucepan over medium-low heat. Add tomatoes, tomato paste, onion, garlic and any optional sneaky veggies. Sauté for about five minutes.

Add bay leaves and bouillon cube.

Add water and rice. Bring to a boil then cover and simmer for 20 minutes over low heat. Remove bay leaves.

Add salt or other spices to taste. Enjoy!
