Pad thai is a traditional meal in Thailand that includes noodles, a yummy sauce and vegetables. Kids in Thailand like to eat it, and you will too! This simplified recipe calls for ingredients that may be easier for your family to find and prepare than a typical Thai family might use. You can also jazz it up by including a protein like shrimp, tofu or chicken, and feel free to use different vegetables you like better!

Adult help needed. First, make the sauce: Add peanut/almond butter, onion, garlic, coconut milk and soy sauce to a medium saucepan. Heat over medium, stirring frequently, until mixed and smooth. Reduce heat to medium-low and let simmer while you do the other steps.
Begin cooking your instant ramen noodles according to package directions.
While ramen is cooking, make your stir-fry: Heat oil in a large skillet. Add remaining ingredients and stir-fry over high heat until the vegetables are tender but not limp, about 8 minutes. If veggies start sticking, add a little soy sauce to the bottom of the skillet.
When noodles and vegetables are finished cooking, you’re ready to put it all together. Put some noodles in a bowl and then top with veggies and sauce to your liking. Enjoy!
