Tanzanians cook many recipes using coconut milk, which makes this rice thick and creamy. Serve it with grilled meat or stir-fried vegetables for a filling meal.

2 cups basmati rice
1 ½ cups water
1 cup canned, unsweetened coconut milk
½ cup peas
½ cup carrots, diced
1 tsp turmeric powder
salt to taste

Rinse the rice in cold water and drain.

Add the rice to a medium saucepan over high heat with the rest of the ingredients.

Boil the mixture.

Reduce the heat to low, and then cover the pot with a lid. Cook until the rice is tender and has absorbed the liquid, about 15 more minutes.

Remove the pan from the heat and let it stand about 5 more minutes, covered. Fluff with a fork and serve.
