"Catch the Bus" Breakfast Tacos
Kids who don’t get enough food to eat have trouble paying attention in school. Breakfast is especially important for brain power! Many children in Latin America eat meals made with tortillas, and you can too when you make these tasty breakfast tacos!
Adult help needed.
With an adult’s help, cook the meat in a skillet over medium-high heat, then set aside.
In a medium bowl, whisk together the eggs, milk, salt and pepper.
Spray a clean skillet with cooking spray. Cook and stir the eggs until almost firm. Add the meat and veggies and continue cooking and stirring until firm.
Wrap a tortilla in a paper towel and microwave it on high for 7 seconds.
Sprinkle shredded cheese onto each warm tortilla. Top with some of the scrambled eggs and meat, and then add salsa.
Wrap the taco in a piece of foil and go! Refrigerate the rest of the tacos and heat, wrap and eat on the following school days.
