“Catch the Bus” Breakfast Tacos

Yields1 Serving

 6 oz turkey sausage or chopped chicken
 6 eggs
 ¼ cup milk
 salt and pepper to taste
 1 cup chopped vegetables such as onions, green peppers and mushrooms
 8 (6-inch) corn or whole-wheat tortillas
 1 cup shredded Monterey Jack cheese
 ½ cup salsa

With an adult’s help, cook the meat in a skillet over medium-high heat, then set aside.


In a medium bowl, whisk together the eggs, milk, salt and pepper.


Spray a clean skillet with cooking spray. Cook and stir the eggs until almost firm. Add the meat and veggies and continue cooking and stirring until firm.


Wrap a tortilla in a paper towel and microwave it on high for 7 seconds.


Sprinkle shredded cheese onto each warm tortilla. Top with some of the scrambled eggs and meat, and then add salsa.


Wrap the taco in a piece of foil and go! Refrigerate the rest of the tacos and heat, wrap and eat on the following school days.
