Baião de Dois

This recipe is popular in the northeastern part of Brazil. When families have enough money to buy meat, they sometimes mix in cooked bacon or sausage.

 1 cup medium-grain white rice
 4 tbsp cooking oil
 3 cloves garlic, diced
 1 medium onion, roughly chopped
 ½ tsp salt
 2 (15-oz.) cans black-eyed peas, drained and rinsed
 ¼ cup fresh cilantro, chopped

Cook the rice according to package directions.

In a separate pan, heat the oil over medium-high heat. Add the garlic, onion and salt, and cook about 3-4 minutes until see-through. Stir in the cooked rice.

Add the black-eyed peas, cover the pan and let cook 3-4 minutes, or until the black-eyed peas are warm. Remove from heat, stir in cilantro and serve.
